The menu presents a blend of traditional dishes with a creative twist, inspired by flavours from four different types of Chinese cuisine – Cantonese, Sichuan, Shanghai and Beijing. Combining age-old techniques with imagination and refinement, Maiden Shanghai creates dishes that are flavourful, unexpected and elegantly executed. The restaurant’s signature dish is the Kung Pao lobster, its preparation delicately handled and its flavours skilfully balanced, which brings diners from far and wide. Another sought after dish is the Peking duck, hand prepared and so delicious that Chef Bing gives it his own name.
The extensive menu means guests are spoilt for choice. It offers cold starters like homemade pickled salmon, poached okra with ginger sauce or poached asparagus with wok-tossed sesame and Shanghai sauce. The hot entrées include classic dishes such as soft shell crab, Shan Cheng chilli chicken and salt and pepper tofu.
The mains menu covers all bases, offering seafood, poultry, meat and vegetarian dishes. Favourites include roasted Chilean sea bass with soya sauce and Sichuan pepper, sweet and sour crispy chicken with dragon fruit, stir fried Australian rib eye with homemade pickled chillies, and braised tofu stuffed with mixed mushrooms in a pumpkin and truffle oil broth.
